Vermouth - L'Élixir de la Dame "La Prairie", semi-sweet

Maison Dâme was created in 2016 by Romuald Vincent in order to promote the spirits of the Charente region, which were then on the verge of extinction. It is housed in the family home of Saint-Brice, a small commune in the Cognaçais region located on the banks of the Charente River, between Jarnac and Cognac. Romuald wanted to bring back to life the tradition of Charentais medicinal wine as practiced by the monks of the Abbey of Châtres de Saint-Brice until the 18th century. 

This handcrafted semi-sweet spring vermouth is a vegetal bouquet of more than 15 plants. It is made from flowers (hawthorn), roots (valerian) and wild berries (rosehip) harvested in Saint-Brice, macerated in organic white wine, before being mixed with Cognac and enhanced with a touch of local flower honey. It offers a floral and spicy nose with notes of buckwheat, carrots and wild flowers. On the palate, springtime flavors of mauve and red fruits, with bitter cherry notes on the finish. 

This vermouth can be drunk neat or in cocktails. It can also be used to create original sauces. Once opened, it can be kept for a maximum of 6 months in the refrigerator.
